Ranched Premium Oysters
The wild hills on the Isle of Hoy provide our Oysters with mineral rich brackish water, which when combined with the saltwater Atlantic Ocean, gives them a perfectly balanced and unique flavour not found anywhere else.
Much like a fine whisky it is the crystal clear waters and finest ingredients that come together to make a premium product. That and a little extra time.
We make sure our heart and soul goes into our Oysters. So much so that we will only allow them to leave us once they are the perfect size. Make sure you keep a close eye out for most loved grade, an ode to where they grow, Hoyster. A larger grade ideal for shucking at home and perfect raw or cooked.
